Chocolate contains a minimum of 35% cocoa components. If a product contains less than 35% cocoa components it is called cocoa fantasy. Chocolate is only a protected name with reference to chocolate bars and chocolate product . If these products do not contain enough cocoa they are called chocolate fantasy.
Spreads can be called chocolate even if they contain just enough cocoa powder to give the product a chocolate colour.
The manufacturer is privileged to decide what cocoa components (cocoa mass or cocoa butter) are used to make chocolate. White chocolate contains only cocoa butter; brown chocolate contains cocoa mass as well.
